40th Birthday Cake for my Sis

The last couple of weekends have been loaded with birthday fun.  Chris's birthday was on the 13th and my sister's 40th birthday is on St. Patrick's Day!  How fun is that!?  So for her, I wanted to include the festivities of the holiday and make something light, since we are all watching what we eat.  I used my favorite and easiest way of making a cake, and mixed 2 boxes of white cake mix with 2 cans of Sprite 0.  Doesn't get any easier that.  To add a bit of fun to the cake, I split the batter into 6 different parts, colored each separate part, and layered it up like the rainbow.  Food coloring makes me so happy!  Here are the pictures.  I am however, ashamed to say I didn't take any pictures of the cake after we cut into it.  But I do promise it worked just like I wanted it too and was beautiful!  The icing was equally light, I used a 16 ounce container of Light Cool Whip and 2 boxes of fat free, sugar free cheesecake instant pudding.  YUM.

The most epic of cakes

For Chris's birthday, I wanted to make him something special!  He really out did himself for me on Valentine's Day...so I felt I "owed" him big time!  I've had this cake pinned on my Pinterest for a couple of years now, all I needed was a really good excuse to make it.  With the help of my good friend Aileen, we spent about 5 hours Friday night putting this bad boy together.  And while I was intimidated about making every single thing from scratch, I knew that with this cake it was either go big or go home.  I didn't want to bother with shortcuts or using home pre- made layers.  We did it all exactly as the recipe said...and amazingly, it turned out perfect!!  Here is the original recipe.  It was incredible and had everyone drooling!  My pictures don't do it justice and I don't think the name does either.  S'mores Cake just doesn't cut it.  There are 2 brownie layers, 2 cheesecake layers, 2 chocolate chip cookie layers, a graham cracker layer, multiple marshmallow fluff layers, and of course the chocolate frosting.  IT.  IS.  SINFUL.

Stepping up my home decor

I've been inspired by a few blogs lately and felt the need to update our entry way and dining room.  This long ass winter has left me feeling blah and I think our house was starting to reflect that.  With spring around the corner, I wanted something cheerful and inviting.  I've been contemplating curtains for the dining room for awhile now, but finding curtains that are 108 inches long at a reasonable price is no easy task.  I had a particular look I was going for, so after a lot of hunting, I found these monsters at JCPenney!  Caught them on sale so they weren't too bad.  

We also did a little rearranging and now I have a HUGE wall that is blank ;)  Chris is certain that emptying up this space was all part of my grand plan...you know, so I can find new things to hang!  While he isn't entirely wrong...I do want to take my time in deciding how to use this wall.  I'm thinking as we continue to grow our family, it would make a nice gallery wall to showcase favorite baby pictures of Truman, Chris and I, our parents, and grandparents.  That will require some serious planning so I'm in no hurry for that.  Right now, I'm just enjoying our updated dining room and foyer!  See what you think!  :)


Thought this wine rack would be more festive with a fresh layer of turquoise paint!
